Summer = Salad. Ok so this week might not be the best example of a perfect balmy British summer but there’s no reason to ignore the fact summer means salads.
Whether you like innocent low fat low carb versions or more gluttonous big fat bowls slathered in meat, cheese and a creamy dressing we’ve got some great ideas from across the spectrum.

This beautiful salad is thin slices of beetroot paired with and avocado and chia dressing. Perfect for entertaining or just “woofing” down yourself! Possibly totally sin free, although don’t hold us to that!
The ingredients here are a classic combination of tomato, mozzarella and basil. The added superfood is avocado. Built like a burger this would make a perfect BBQ accompaniment or light summer starter.
A proper superfood example. The trick with this salad is apparently getting the kale right. Classed as a superfood it can give you a perfect boost.
One for the less healthy amongst us. This salad has everything you could possibly want: meat, bbq sauce, cheese and a creamy dressing… oh and sugared cashews! Yes sugared cashews – yum.
