Here at Mummies’ Club, we are a big fan of Meat Free Mondays. What’s not to like about being kind to the environment, boosting our veg intake and saving some pennies in the process? And after the Christmas splurge of calories and cash, eating less meat each week seems to make a whole lot of sense.

These recipes are perfect for anyone who fancies a bit of a detox after eating mince pies by the trough-load throughout the whole of Yule.

Spaghetti (lentil) Bolognese

We’ve yet to meet a kid who doesn’t love a good Bolognese, so they’re sure to polish this one off as soon as it hits the table. Just substitute the meat for some red lentils in your usual ragu recipe, and you’ll be good to go.

Clever ol’ Jamie Oliver has made sure this is not only vegetarian, but vegan too, and it’s also pretty simple to whip up by blitzing a load of frozen veggies with seeds and spices. The kiddiwinks are sure to love getting their hands dirty by making their own mini patties for tea.

Mexican Casserole With Roaster Corn and Peppers

This one is packed to the rafters with beans, corn, sweet peppers and you can also throw in a chilli – if your kids are up for a bit of heat. It’s basically a Mexican lasagne, using tortillas instead of pasta. We love this clever idea – and we reckon the family will too.
